In addition, good manufacturing practices are crucial in the handling of processed foods. The main objective of this research work is to develop a manual of good manufacturing practices (GMP) for the microenterprise “Frutata,” located in the parish of Once de Noviembre in the canton Latacunga. To do so, research techniques such as observation, interviews and surveys were used, applied to 13 operators of the company. The results revealed that the production processes in the microenterprise are carried out in an empirical and traditional manner, which causes difficulties in some stages of production. This led to the conclusion that the microenterprise requires a manual of good manufacturing practices to improve ice cream production. It was found that there are several areas where contamination prevails, both in the containers for preparing ice cream and in the workers' clothing. 84.62% of employees consider it urgent to implement a process control guide to produce quality products for consumers. Therefore, it was necessary to prepare a manual of good manufacturing practices (GMP) to optimize production processes.
