Industrial, 2026-10-14) Rodríguez Chora, Karen Andreina; Ruiz Carrillo, Jonathan Alexander
This research aimed to standardize work methods at Viva la Vita cafeteria in order to contribute improving on its operational efficiency through work methods and time study. The operating processes were assessed using direct observation, process analysis charts (PAC), flowcharts, ABC analysis, Pareto analysis, and time study. The prioritization process identified order preparation, order registration and billing, customer service, and communication between the cashier and production areas as the most relevant processes, accounting for 82% of the total weighted value. The selected processes recorded a current total time of 2,052 seconds, with order preparation representing 67.20% of this time. As part of the study, the baking and heating activity was evaluated, resulting in a reduction in average time from 527.70 to 401.50 seconds, equivalent to a 23.92% improvement. Based on the analysis, standardized work methods and standard times were established, resulting in a proposed total time of 1,825.50 seconds, which represents an estimated reduction of 11.04% compared to current situation. Order preparation showed the greatest estimated improvement, at 22.68%. Finally, indicators were proposed to monitor productivity, preparation time, and compliance with standardized procedures, providing a basis for control and continuous improvement of operational efficiency. The operational productivity indicator showed an estimated increase of 12.41%, based on the reduction of total required time for the analyzed processes.
