The main reason was the worrying lack of healthy dessert options in the area and the growing increase in diseases such as diabetes. According to the National Institutes of Health (NIH, 2016), diabetes is a threat that arises when blood glucose levels rise due to excessive consumption of sugars and saturated fats. Therefore, the need was identified to create a healthy dessert, based on vegetables, particularly from three types of beets such as (sugar beet, table beet and fodder beet), which provides vitamins such as B and C, minerals such as potassium, iron, magnesium; essential for good health. The results of the surveys revealed that 81% of the population would be willing to consume beet cupcakes. At the financial level, it was determined that the selling price would be $2.32 per 40 grams, with an NPV of $4,997.71, an IRR of 37% and a payback period of 3 years and 1 month, which confirms the economic viability of the project. This study highlights the existence of a potential market in Salcedo, demonstrating that the creation of such an enterprise is both commercially and financially feasible.
