- ItemEvaluación de la calidad de la leche en el cantón Sigchos(Ecuador: Latacunga: Universidad Técnica de Cotopaxi (UTC)., 2024-08) Viteri Esquivel, Nicole Giuliana; Beltrán Romero, Cristian FernandoThe current research project was carried out in the northern sector of the Sigchos town, province of Cotopaxi, which faces a problem in the quality of the milk that is produced in the region. The main objective of this research was to evaluate the quality of milk in the northern sector of the Sigchos town, considering parameters such as: density, acidity, fat content, non-fat solids, protein, lactose, pH, conductivity, freezing value and added water. The La Y sector showed the highest density (1,030), while Triunfo Grande had the lowest (1,021), a value that does not comply with INEN standards. Differences in density can be attributed to variation in the composition of solids and fat in milk, influenced by factors such as temperature and storage. Regarding fat content, no significant differences were found between the sectors, although Jatunloma (4.8%) and Triunfo Chico (4.29%) exceeded international standards. The analysis of non-fatty solids showed that Triunfo Grande (9.08%) and La Y (8.98%) comply with the INEN regulations, while Colestambo (7.7%) fell below the minimum standard. The protein study revealed that Jatunloma (3.54%) and Triunfo Grande (3.43%) are close to the expected average (3.5%), while Colestambo (2.29%) showed a low value, possibly influenced by diet and protein supplementation. Regarding conductivity and pH, no significant differences were found, although sectors such as: La Y and Triunfo Chico presented high values, suggesting animal health problems or inadequate management practices. In conclusion, the quality of milk in the Sigchos town varies according to the sector, with differences in density, acidity and fat content.
