    Elaboración de una bebida energética a base de dos variedades de maíz con adición de Ginseng (panax quinquefolius) en diferentes concentraciones.

    The objective of this research project was to develop an energy drink using two varieties of corn flour, guayusa infusion, and ginseng extract (Panax quinquefolius) in two different concentrations. For this, a completely randomized block design (DBCA) was used in a 2x2x2 factorial arrangement, resulting in a total of 8 treatments with 2 repetitions each. The energy drink was made by combining the two varieties of corn flour (purple and yellow), two concentrations of ginseng extract (0,25% and 0,50%), and two types of sweeteners (sugar and edulmix). Physicochemical, sensory, proximal nutritional, caffeine content, osmolality and microbiological analyzes were carried out. The results indicated that both the varieties of corn flour and the types of sweeteners significantly influenced the parameters of soluble solids, pH and titratable acidity of the drink. The final values obtained were 3.9 °Brix for soluble solids, pH of 4.5 and titratable acidity of 0.45%. These results were analyzed in accordance with the NTE INEN 2304, 2017-04 regulations. The t4 treatment was highlighted, which combined purple corn flour with 0,50% ginseng extract and edulmix, followed by t6 treatment, which used yellow corn flour with 0,25% ginseng extract and edulmix. Both treatments presented the best results compared to the others. A proximal nutritional analysis was performed on the two most promising treatments of caffeine content, osmolality and microbiological, caffeine content, osmolality and microbiological, which confirmed compliance with the standards established by the NTE INEN 2411 standard and the Colombian standard NTC 3837. The nutritional analyzes of these treatments revealed a protein content of 0.46%, fat 0%, fiber 0%, ash 0.14%, carbohydrates 2.60% and calories 12.20%. In addition, the caffeine content was 32.92 mg/100 ml, and the osmolality was 259 mOsm/Kg and 256 mOsm/Kg, respectively, thus complying with current regulations.
