The general objective of this research was to evaluate the effect of an ethylene inhibitor on the postharvest behavior of pepper (capsicum annuum), in three color indices. A randomized complete block design (DBCA) was used with a 3x2x4 factorial arrangement having 24 treatments and 72 experimental units. Four doses of ethylene inhibitor were applied in the following quantities, which were 0.50, 1, 1.5 and 0, which was applied to each experimental unit according to its respective dose. With indicators to evaluate such as physiopathy, weight loss, firmness, pH and soluble solids. With the different results that we obtained the best doses in the different parameters that were studied in the inhibitor, we can determine that the one we have as the best dose is C1 with a dose of 0.50 cm2 since it has a range of 5.38, the index of color with the best result with a rank A and according to the weight, 100% green was considered with the average of 55.33 and in size the one that can be used is the size of 20 cm with an average of 5.4.
