    Implementación de un sistema de filtrado de jugo de caña a altas temperaturas en la fundación maquita de la ciudad de Latacunga.

    It was performed the design and implementation a preheated sugarcane juice filtration system for panela production, starting of the sugarcane juice rheological study at different temperatures, it was got an average viscosity value 5.54 mPa*s. The selected filter has the characteristics by withstanding high temperatures, the studied viscosity and the availability. The design for the filter holder must meet the requirements from: adaptability to the selected filter, temperature, application to the food sector and maneuverability. It was determined the local loss coefficient in the filter in function the Reynolds number, necessary for sizing the system, once, it calculated the system with the necessary requirements, they were studied and structured the pipes and pump, which must meet the required power 36W, a flow rate 3 m³/h and a temperature 90°C, by getting the work curve from installation, for which it was validated from system installation experimental data, what is from 304 stainless steel of food grade. The filtration results in a process of real production are taken from 150 ml samples juice, one before circulating, by the system and another after the system, with a filtration result 85%. The installation total cost is $ 1,632.95, the filtering system contributes with a significant improvement in the panela quality.
