dc.descriptionThe present research work carried out in the Latacunga Municipal slaughterhouse emphasized the evaluation of the slaughter process and its incidence on productivity through good manufacturing practices for the cattle, pig and sheep slaughter line that are components of the two variables, emphasizing the quantitative approach taking into account certain indicators that generate productivity within the production process, through the statistical analysis of these data allowed to verify the incidence on productivity, the instruments such as the interview guides that were carried out to the Administrator of the slaughterhouse, Director of AGROCALIDAD and the veterinarian, the questionnaire for the slaughterhouse workers and the introducers was also used, in order to obtain the necessary answers that allowed the analysis of the two variables, Independent and Dependentes_ES
dc.description.abstractEl presente trabajo de investigación realizado en el camal Municipal Latacunga se enfatizó a evaluar el proceso de faenamiento y su incidencia en la productividad mediante las buenas prácticas de manufactura para la línea de faenamientos de bovinos, porcinos y ovinos que son componentes de las dos variables, haciendo énfasis al enfoque cuantitativo tomando en cuenta ciertos indicadores que generan la productividad dentro del proceso productivo, mediante el análisis estadístico de estos datos permitieron comprobar la incidencia en la productividad, se utilizó los instrumentos como las guías de entrevistas que se realizó a la Administradora del camal, Director de AGROCALIDAD y el médico veterinario, también se utilizó el cuestionario para los trabajadores del camal y los introductores, con el fin de obtener las respuestas necesarias que permitió analizar las dos variables, Independiente y Dependientees_ES
