- ItemObtención de harina de sangre a base de desechos líquidos (sangre bovina) generados en el camal municipal del cantón Latacunga.(Ecuador: Latacunga: Universidad Técnica de Cotopaxi (UTC), 2024-08) Alvarado Naranjo, Eddy Sebastián; Cisneros Llamba, Lenin Israel; Zambrano Ochoa, Zoila ElianaThe main objective of this research is to process the liquid waste generated by the Municipal Camal of the Latacunga Canton, specifically bovine blood, through an agro-industrial transformation to obtain blood meal. To achieve this, different objectives were set, such as quantifying and detailing the current situation of this liquid waste, carrying out the transformation process to obtain flour, and carrying out the physicochemical and bromatological characterization of the processed blood meal. A completely randomized block design was developed with a 2x2x2 factorial arrangement with two repetitions. In the development of this experimental design, three types of factors were used, factor A refers to the use of additive (with anticoagulant and without anticoagulant), factor B refers to the cooking times at a temperature of 80°C and the factor C refers to the drying times at a temperature of 70°C, so physical-chemical analyzes were carried out on all the treatments obtained to measure the percentages of humidity, ash, pH and protein. Subsequently, after this characterization, the most appropriate treatment is selected and a microbiological analysis is performed to evaluate the useful life and quality of the blood obtained. The best treatment obtained was the number T5 /a2b1c1, which the best results are observed such as: Humidity 17.67, Protein 87.07, Ash 2.71 and pH 8.4 which show that they are within the permitted ranges for obtaining blood meal. Demonstrating that through microbiological analyzes it was possible to reach the results required to obtain the flour and preserve the product with a useful life of 1 month for its production or use.
