- Item“Plan de negocio para la implementación de un local de comida saludable”(Ecuador : Latacunga : Universidad Técnica de Cotopaxi (UTC), 2024-08) Acurio Fuel, Eugenia Nataly; Chimbo Sailema, Jimmy Steeven,; Herrara Soria, Pablo GilbertoThe business plan presented in this document is for a healthy food establishment called “Healthy and Fresh”, which offers a variety of menus prepared with healthy vegetables and fruits, the location is in Latacunga, in the Ignacio Flores parish. This business plan is supported by a survey conducted among a population of 56,923 inhabitants, that are demographically segmented between 18 to 65 years old with a sample size of 385 people. The survey highlights that 93.1% of respondents would visit the healthy food establishment “Healthy and Fresh”. It was determined that there is a demand of 52,995 people who would consume healthy food. A technical study was conducted showing that the actual capacity at the start will be 44,634 customers per year, representing 50% of the effective capacity. Additionally, the annual preparation capacity was determined to be 2.448 healthy meals. Besides the economic and financial study for “Healthy and Fresh” the obtained results revealed the feasibility of executing this business plan with an initial investment of $19.628,34. It resulted in a net present value of $1.911,10, an internal rate of return of 24.02%, a payback period of 3 years, 12 months, and a cost-benefit ratio of $1.98.
